Chicken Adobo (Chicken with Soy Sauce)

Adobo is a series of dish which may contain pork or chicken meat as major ingredient. However, there are many variants which may use other meats as well. As with other dishes, many variations are possible with this popular dish that came from Chinese influence. You can include many ingredients that were not usually included in the traditional recipe like cheese for example. However, I present my ordinary chicken adobo recipe in this post.

Ingredients:

½ kg Chicken drumsticks

3 pcs. Bay leaf

¼ tsp. Black pepper powder, freshly milled

4 tbsp. Premium dark soy sauce

1 cup Water

½ tsp. Sugar

5 cloves Garlic, minced

1 pc. Onion, medium, thinly sliced

1 pc. Ginger, fresh, thin slice

1 tbsp. Coconut vinegar

1 tbsp. Safflower oil

Cooking Instruction:

In a saucepan, heat the oil and sauté the garlic, onion, and ginger until the garlic is golden brown and the onion starts to caramelize. Toss in the chicken and mix. Continue intermittent stirring until the surface of the chicken appears blanched. Add the rest of the ingredient and cover. When water boils, lower heat to maintain a gentle simmer. Continue cooking until liquid is reduced to about ¼ cup. If chicken needs further tenderizing and liquid is low, you may add more water but make sure the sauce is about ¼ cup when cooking is completed. Enjoy with plain steamed rice or steamed buns.
