Bagoong Rice

Fried rice can come in so many variants. The most unique to my opinion is called ‘Bagoong Rice’. It consists of shrimp paste as major flavour ingredient. This I think is unique to the Philippines. Although shrimp paste is also found in other countries like Vietnam and Thailand, etc. I think this dish is not cooked in these countries except here in the Philippines.

Ingredients:

4 cups Cooked rice

5 cloves Garlic, minced

1 pc. Onion, medium, thinly sliced

¼ tsp. Black pepper, freshly milled

4 tbsp. Shrimp paste (Bagoong)

2 tbsp. Safflower oil

Cooking Instruction

In a large wok, heat the oil and sauté the garlic and onion until the garlic is golden brown and the onion starts to caramelize. Add the shrimp paste and mix. Cook for about two minutes and add the rice. Mix and sprinkle the black pepper. Cook for an additional of about five minutes and serve. It may be eaten on itself or enjoyed with other dish.
