Malunggay with Egg (Moringa Leaves with Egg)

Malunggay is high in protein and minerals, vitamins too. Known to the scientific world as a ‘miracle vegetable’. Many native Filipino recipes are therefore available for cooking with this versatile ingredient. With the various health risk that people are exposed to because of modern diets, it is nice to sometimes cook traditional recipes which are healthier. Like this one I now share using the leaves of malungay plant as major ingredient. Simple ingredients that can be prepared easily and still provide nutritious meal. I sometimes look forward to cooking and eating these simple foods. Sometimes one has to come back to the basics to renew one’s senses and vitality and I do it through many ways of which cooking is one.

Ingredients:

8 pcs. Large eggs

3 cups Malunggay leaves

1 tbsp. Garlic (minced)

1 pc. Onion (medium, thinly sliced)

¼ tsp. Black pepper (powder)

4 cups Water

1 tbsp. Safflower oil

½ tsp. Sugar

Cooking Instruction:

In a large saucepan, heat oil and sauté the garlic and onion until the garlic turns golden brown and the onion starts to caramelize. Add water and boil. Once the water starts to boil strongly, add the salt and sugar. Drop one at a time the contents of each of the eggs onto the boiling liquid instantly coagulating and cooking it. After dropping the last of the eggs, continue to boil for at least 2 more minutes and toss in the malunggay leaves. Cover and simmer for 2 minutes. Enjoy the very healthy soup!
