Chicken Afritada

Sometimes you crave for simple foods. Easy to prepare but rich in flavour. One popular recipe in the Philippines for chicken is called ‘Chicken Afritada’, one of the numerous tomato based stew that has been introduced during the Spanish era.

Ingredients:

1 ½ kg Chicken (cut into serving pieces)

½ kg Potatoes (peeled and cut into wedges)

1 pc. Green bell pepper (large, cut into large pieces)

½ cup Safflower oil (for frying potatoes)

2 tbsp. Safflower oil (for sautéing)

2 tbsp. Garlic (minced)

1 pc. Onion (medium, thinly sliced)

½ tsp. Black pepper (powder)

1 cup Water

½ cup Tomato sauce

2 tbsp. Premium dark soy sauce

1 tbsp. Sugar

Cooking Instruction:

Deep fry the potatoes in hot oil and set aside on top of paper towels to absorb the excess oil.

In a separate saucepan, heat the oil and sauté the garlic and onion until the garlic turn golden brown and the onion starts to caramelize. Toss in the chicken and stir. Cook for two minutes. Add the soy sauce, black pepper, sugar, and water and boil, lower the flame and simmer for about 30 minutes or until the liquid is reduced to about ¼ cup water. Add the tomato sauce and maintain heat to provide gentle boiling/simmering. Toss in the bell pepper and potatoes and cook for another 2 minutes. Enjoy as rice topping or with bread.
