Buttered Green Peas with Meat and Herbs

Sometimes you want something quick to prepare while still having some unique taste. This one is easily prepared.

Ingredients:

2 cup Green peas

½ cup Plain Bacons cut into squares

½ cup Cheesedogs, cut into thin bite sized pieces

½ cup Large prawns, cut to bite sized pieces

1 tbsp. Extra virgin olive oil

1 tsp. Worcestershire sauce

½ tsp. Iodized salt

2 tbsp. Premium butter

½ tsp. Dried, minced oregano

1 tsp. Dried, minced basil

¼ cup White wine

5 cloves Garlic, minced

1 pc. Onion, large, thinly sliced

½ tsp. Black pepper powder

Cooking Instruction:

In a Teflon saucepan, heat the olive oil and sauté the garlic and onion until the garlic is browned and the onion starts to caramelize. Add the prawns and stir until it changes color to orange and then add the cheesedogs. Continue to stir occasionally until the cheesedog is cooked. Add the bacon and toss. When the bacon fat becomes translucent, add the Worcestershire sauce, black pepper, oregano, basil, and white wine. Evaporate the alcohol of the wine and then add the water. Cover and lower heat to maintain a gentle simmer and cook for about twenty minutes or until the liquid is evaporated to dryness. Add the peas and mix. Add the butter and stir well and cook for an additional time of about two minutes. Serve immediately.

Meat and Zucchini in Creamy Blue Cheese Sauce

Blue cheese is one of my favourite cheeses. Flavourful and rich in cheesy taste. In this recipe, I have used the said cheese as flavour for the dish. Enjoy!

Ingredients:

¼ kg Pork, cut into small cubes

¼ kg Chicken breast fillet, cut into small cubes

1 ½ cups Zucchini, cut into cubes

5 cloves Garlic, minced

1 pc. Onion, medium, thinly sliced

¼ tsp. Black pepper, freshly milled

¼ tsp. Nutmeg powder

¼ cup White wine

1 tsp. Worcestershire sauce

2 tbsp. Blue cheese

¼ cup Sour cream

1 tbsp. Extra virgin olive oil

1 tbs. Butter

½ cup Water

4 pcs. Hungarian sausage

1 tsp. Basil

1 tsp. Marjoram

¼ cup Water for suspending the cornstarch

1 tbsp. Cornstarch

½ tsp. Iodized salt

Cooking Instruction:

Heat olive oil in Teflon saucepan and sauté the garlic and onion until the garlic turns golden brown and the onion starts to caramelize. Toss the sausage and stir occasionally until cooked. Add the chicken breast and pork and mix. Add the black pepper, basil, marjoram, nutmeg, salt, Worcestershire sauce, and white wine. Cover and cook until dryness. Add water and heat to boiling. When it starts to boil, add the blue cheese and stir until the cheese has dissolved, lower the flame to simmer and cover for about 15 to 20 minutes. After this time, add the butter and mix. In a small bowl, suspend the cornstarch and add the sour cream. Add to the cooking mixture and stir well. Also, toss in at this point the zucchini and stir until the cornstarch has cooked. Serve hot with bread or as rice topping. Goes well with your favourite white wine too.

Meat Overload Pizza

Pizza, popularized in the US and introduced to the Philippines and most countries. In the Philippines, it is also a popular food item especially for those in a hurry. You can even make one yourself using one of the readymade crusts. That way, you can have whatever toppings you like for your pizza. From the simple and customary toppings to the most bizarre which you would like to keep it a secret all by yourself.

Ingredients:

1 pc. Pizza pie crust (ready to cook)

¼ cup Pizza sauce

1/3 cup Mozzarella cheese (grated)

½ cup Bacon (honey cured, cut into thin strips)

½ cup Salami (cut into 1 cm. Squares)

Some fresh onion rings

1 tbsp. Bell pepper (squares)

Cooking Instructions:

Spread evenly on top of the pizza crust the pizza sauce by using a spoon. Distribute evenly on top of the sauce the cheese. Scatter the bacon and salami, onions, and bell pepper on top of each other.

Bake in a preheated oven at 220 degrees centigrade for about 8-10 minutes or until crust is just done. Do not overcook the bacon. Enjoy...

Chicken in Sweet sauce (Chicken Tocino)

Tocino is a popular Filipino dish. It is pork that has been cured in sugar, pineapple juice, Gin, garlic, and pink powder. The use of pink powder imparts that distinctive taste to cured meats. However, some people would like to avoid eating foods that has been preserved by addition of pink salt so some households cook this dish fresh. Meaning, they cook using all the ingredients I have mentioned but without curing the meat and without the pink salt. It tastes somewhat different from the cured product but nevertheless interesting and nice too. So can you also do this recipe for chicken. I have cooked this simple recipe without the customary ingredients used for tocino and I think the outcome is nice too.

Ingredients:

1 ½ kg Chicken (cut into serving pieces)

1 pc. Onion (medium, cut thinly)

2 tbsp. Garlic (minced)

¼ tsp. Black pepper (powder)

1/3 cup Sugar

¼ tsp. Iodized salt

½ cup Water

Cooking Instructions:

In a suitable saucepan, place all of the ingredients and heat to boil. Once it boils lower the flame to maintain a steady simmering boil. Simmer with occasional stirring uncovered until the sauce is reduced to dryness. Continue heating and stirring until the sugar starts to caramelize and coats the chicken. Serve with either steamed or garlic rice.
