Daikon Radish Omelette

Daikon radish is excellent source of fibre and has high antioxidants. One unique recipe that I have learned to make is an omelette with daikon radish as the filling. Here it is.

Ingredients:

1 pc. Daikon radish Medium

3 pcs. Eggs, beaten

¼ tsp. Iodized salt

1/8 tsp. Black pepper powder

3 cloves Garlic, minced

1 pc. Onion (medium, thinly sliced)

1 tbsp. Oyster sauce

1 tbsp. Safflower oil (for sautéing garlic and onion)

3 tbsp. Safflower oil (for frying the omelette)

Cooking Instruction:

Peel the daikon radish and cut thinly, you may also use a grater or some special implement to create thin slices of the vegetable. Set aside.

In a suitable bowl, beat the egg and mix the black pepper, iodized salt, and oyster sauce, and grated radish.

In a Teflon frying pan, heat 1 tablespoon of oil and sauté the garlic and onion until the garlic turns golden brown and the onion starts to caramelize. Transfer the sautéed mixture into the beaten egg and mix well.

Heat 3 tablespoon of oil and cook the omelette. Cook each side to desired level and serve...
